Hi everyone!

Nothing brings back the Christmas feeling for me more than the smell and taste of panettone, so I finally decided to try making my own for the first time and honestly, I’m pretty happy with how they turned out!

They’re definitely not perfect, but the they ended up super moist, soft, shreddy, and really flavorful. Way better than I expected for a first attempt.

I used instant dry yeast and added orange zest, lemon zest, fresh orange juice, honey, vanilla paste and a splash of rum to the dough. For the fillings, I did dark/milk chocolate chips for the chocottone, and for the panettone I used a mix of dried fruits (black and golden raisins, dried orange peel, and dried papaya).

Now I’m excited to play around with new flavors like apricot, pistachio, and even some cream-filled versions.

    I’ve not been tempted to try panettone until I saw your post. They look incredible. How much dough did you place in each vessel? I like the idea of smaller “cups” to give as gifts! I’ve only seen large loaves, not smaller ones. It looks like one batch divided into four equal amounts, yes?

    Did you cool it upside down? Because it collapsed a little bit. If you did probably you will need to work more on the gluten network, if not try next time, you will get a better shape and structure inside.

    Still, not a bad result for your first time.
